2007 Felsina Chianti Classico

Belted Cow Veal and Pancetta Ragu

Ingredients

1/4 C EVOO
4 oz Pancetta Chopped fine
1 Onion (Spanish) diced
4 Cloves garlic, chopped

2.5lbs Ground Veal
2 sprigs rosemary chopped fine
1 C Dry White Wine
16 oz canned tomato pureed

¼ C parsley chiffonade
1/2C Heavy Cream
Salt
Pepper

Instructions

Sweat garlic, onion and pancetta until soft(no color).
Add veal and cook until moisture is gone(remove fat)
Add wine, half of the  rosemary and tomatoes, simmer for one hour.

When finished simmering stir in additional rosemary, parsley and cream.  Season with Salt and pepper.   Should be slightly peppery
